The texture is also smoother, and it can be dyed and molded into shapes.Īlmond paste (as known in Europe) is less sweet, and it is said that the quality is, therefore, higher: less sugar, more almonds. Marzipan usually contains (the store-bought versions) way more sugar than store-bought almond paste. The most significant difference is the amount of sugar and the texture in almond paste or marzipan. So, if you can’t find marzipan in your store, ask for almond paste. In Europe, it is called marzipan, whereas, in (North) America, you will have more luck with the term almond paste. Partially, it comes down to where you live. Since marzipan is a simple recipe with blended almonds and sugar, what is the difference between almond paste and marzipan? In essence, they are very similar. It gained popularity in Spain in the 13th century and Germany in the 15th century. Where in Europe then? Hungary, Spain, or Italy? I can’t tell you 100% sure, but it became a specialty of the Baltic Sea and Germany. Some say it was invented in Persia and introduced to Europe through the Turks. But Germans will tell you differently, stating that the invention of marzipan is usually attributed to Germany (Lübeck). I’m not sure on this one, but it seems to be originated from the Arabs. I’m always curious where recipes such as marzipan originate from. And once you have made a marzipan roll or disc, you can keep it for later to sweeten up your favorite recipes or eat as is. You can also add rose water and a little bit of (bitter) almond extract to intensify the almond flavor, but it’s optional. Marzipan is made with powdered sugar, almonds, and a little bit of water. This paste is used in sweet and delicious things, such as chocolate, croissants, cookies, candy bars, candies, fruit cakes, cupcakes, and much more. Marzipan is finely ground-blanched almonds mixed with sugar (the vegan variation). It may be popular in Europe, but outside of Europe, in countries such as Italy, Greece, and Cyprus, marzipan is a traditional food to serve on festive days. It is also called almond paste or almond candy dough. ![]() The taste of this homemade marzipan is mind-blowing, considering how easy this recipe is. I find this recipe better than the vegan store-bought versions, and it is so easy to make. It is also useful for people with nut allergies.I know first-hand that marzipan is a big thing in the Netherlands and Germany. It is cheaper to produce than marzipan so is sometimes used in commercial baking. There is also a product called persipan which is made from finely ground apricot or peach kernels instead of almonds. If the paste is spread out or mixed in with a batter then we would suggest mixing equal quantities of ground almonds and caster sugar to get the correct total weight for the recipe and then adding enough lightly beaten egg white to bind the mixture into a paste. If the almond paste is rolled or moulded in any way then you can probably use marzipan (use a good quality brand which is likely to have slightly more almonds in). If it comes from other countries then you may have to make up some almond paste yourself, depending on how the paste is used. If it is a UK recipe then you can be pretty sure that almond paste will mean marzipan. The other ingredients can include eggs, colourings and flavourings (often rosewater or orange flower water), cream and vegetable oil. The larger proportion of sugar makes the marzipan smoother and easier to roll out and marzipan will always be used for covering cakes and making edible models. Generally, almond paste will have roughtly equal proportions of almonds and sugar (plus other ingredients) and marzipan will have a higer ratio of sugar (up to 75% sugar) plus other ingredients. The main difference between US/European almond paste and marzipan is the ratio of ground almonds (almond meal) to sugar. ![]() In the UK marzipan and almond paste are the same product whereas in the US marzipan and almond paste are two different products. Unfortunately the answer partly depends on what country you are in as to which terms are used. What is the difference between marzipan and almond paste?
